Time: Entries will be received at the Ag. Center on Saturday, June 28, between 8:00 A.M. and 10:30 A.M.

General Rules

1. Open to all Tennessee residents of any age.


2. Hams must be entered and exhibited in the name of the owner.


3. Exhibitor limited to one entry per class.


4. All entries must be sound.


5. All exhibits will be hung for display.


6. Hams will remain on display until Sunday, July 6 and must be picked up between 12:00 p.m. and 2:00 p.m.


7. Ham Premiums will be: $20 for 1st place, $15 for 2nd place, and $10 for 3rd place.


8. Bacon Jowl, and Shoulder Premiums: $15 for 1st, $10 for 2nd, and $5 for 3rd.


9. Best of Show for Largest Ham – $20


10. Best of Show Overall – $20

Judging Criteria

Judging Criteria:                  Maximum 100 points

Conformation (20 points)       General shape

Workmanship (10 points)       Neatness and attractiveness of trim

Meatiness       (20 points)        Lean to fat ratio

Color              (20 points)        Desirability and uniformity of color

Aroma            (30 points)        Desirability of aroma

Classes

Class I: Home style country hams under 20 lbs.
Class II: Home style country hams over 20 lbs. Largest Ham (Rosette)
Class III: Bacon (sugar cured)
Class IV: Bacon (salt cured)
Class V: Jowl
Class VI: Shoulder
